Hot, Cool, or Uneven
Start by pinning down the complaint. An oven that runs consistently too hot or too cool across the board points toward the temperature sensor or a calibration offset. An oven that is uneven, browning on one side or one rack, points more toward airflow, a convection fan, or an element heating unevenly. A gas Viking oven that is slow or will not reach temperature points toward the bake igniter.
These are different faults with different fixes, so an accurate description of the symptom is the start of an accurate diagnosis.
Sensors, Calibration, and Elements
The oven temperature sensor is a common cause. As it drifts, the control heats to the wrong actual temperature even though the display looks right. Calibration offsets can also creep over time. On the heating side, a gas oven's bake igniter that is weakening will underheat, while on electric-equipped configurations a failing bake or convection element heats poorly or unevenly.
We test the sensor, verify calibration, and check the elements or igniter to find which is responsible, rather than assuming the oven simply needs recalibrating.

Wrong Temperature Is Not Always Calibration
